We’re hosting my fam plus one this year. My oven gave up the ghost last week, of course, and I haven’t found a repairman yet. Well, one guy but he didn’t show on appointment day. So my sister is making the turkey and stuffing.

I’m making fried tofu with lemongrass. The pumpkin cheesecake with chocolate Graham cracker crust is done; orange cranberry relish sauce -done. Delish homemade tamales - picked up and ready ( it’s quite the seasonal cottage industry). Pickled carrots -done.

Now if I can just get the puppy poop out of the rug… did I mention Sprout and Leia got a pug puppy? OMG so cute! No pic yet but I’ll get some tomorrow.

My wife would hate that pie. She hates pickles. If I bring home burgers from the local joint and hers has a pickle on it, I'd never hear the end of it for the next fifteen minutes.

Does she hate a specific type or all types? I know some who despite dill pickles but can handle other types (not that you can specify different types on your burger). I like dill and use it on various things like green beans. Yum.

The best green beans I had were at an Amish-style restaurant. They had dill and were cooked, I assume, in a large amount of real butter. I am not a fan of green beans, but these were great. I also like the pickled eggs (pickled with beet juice).

I agree completely with your wife. Even if you take the pickles off, you still have that disgusting pickle juice contaminating the burger.

Sweet pickles with a meal are fine.

Dill pickles have no redeeming value.

Speaking of pickles, I wanted to bake a loaf of rye bread and made a loaf with mostly rye flour, some bread flour, and no caraway seed as DH is not a fan. I was disappointed that it didn't taste anything like the commercially produced rye, and I didn't think that the lack of caraway was the only reason. I searched the internet for info about this and learned two things: King Arthur Baking sells something called 'rye bread flavor' which seems like cheating to me. (They also sell something for flavoring pizza dough- I have no idea if this is something commercial pizzerias use.) What really surprised me was that many of the rye bread recipes called for not water, but dill pickle juice! If I ever endeavor to make rye bread again, I'll make sure to have some dill pickles on hand. Has anyone here heard of this or tried making bread with pickle brine?

I have had so-so luck making rye bread, but I may try again.

I think you need to make a rye sour to get the flavor that you're looking for.

I (years ago) have used the KAF rye flavor, and it is pretty good.

While there is no decent Chinese food here in south Florida, there are decent NY-style delis nearby.. (and a good Polish deli, but that's an hour away) So when I an jonesing for rye bread, I just buy it 8-)

I did try making sourdough starter using only rye flour, but it made no difference in the flavor. :cry:

Hmmm I love a good rye, and have never been able to find a decent one on the shelf in Portland. It's one of the many things I miss from back East. I miss pizza, pastrami, and a good R&B station.

I know there are fans of Spam around, but I'm not one of them. We did have some great Spam appetizers at the Fly by Night Club (may it rest in peace) in Anchorage, though.
