Many years ago, I was watching my father conduct the university symphony on Beethoven's 7th. I swore at one point in the last movement, he actually left the ground and had air time.

The 4th movement of Beethoven's 7th has been a favorite of mine for over 60 years.

I have a fondness for Organ and Orchestra (the organ part is self-explanatory). The two together brings some wonderful depth to the sound.
There is obviously, Saint-Saëns - Symphony No 3 in C minor, Op 78, the Organ Symphony (though the organ only plays in the 2nd and 4th movements). This is a great recording of it (and I get a giggle in the early part of the last movement where the French Organist goes to the wrong manual/keyboard on an English organ as the main "Great" manual for most French instruments is the bottom one, not the one above it as in most other countries). You don't see the organist much because the part is not really flashy. You do, however, have be to able to count, an issue that vexed an organist years ago when my dad was in a symphony playing it. I tend to enjoy playing along with this one.
The tympanist goes wild at the end. The last movement, the one with the most organ starts around 28:15.
Samual Barber's Toccata Festiva is a personal favorite. Rhythmically, it is all over the place. There is a wonder cadenza played entirely on pedals after the 10-minute mark. She does wonderfully on it.
