Very easy. Just put little neck clams on the grill and wait until they open. Remove from heat add butter, bread crumbs, etc. Then return to heat until butter is melted and bread crumbs begin to brown.
Good way to make clams casino.

It’s funny (and kind of odd) that the most googled “how to grill” in some states is an item that the state is known for producing. Like “how to grill corn on the cob” in Nebraska. I mean, you’d think the Nebraska Cornhuskers would know all of the different ways to prepare corn.

In Kansas, on the other hand, they want to know how to grill salmon. Which makes sense, because they wouldn’t have already figured that out.

Sriracha lovers everywhere are feeling the not so pleasant sting of the beloved hot sauce shortage, now in its second year. Drought in Mexico has resulted in a scarcity of chilli peppers – in particular, red jalapeños, the raw material of sriracha – leading Huy Fong Foods, the California-based maker of the iconic condiment, to scale back production.

“It is a challenging crop to grow,” said Stephanie Walker, a plant scientist at the New Mexico State University, who serves on the advisory board of the Chile Pepper Institute. “Jalapeños are really labor intensive, requiring people to de-stem them by hand before they go for processing.”

The special care the chilis require renders them that much more vulnerable to extreme weather conditions, such as the persisting drought in northern Mexico, fueled by the depleted water supply in the Colorado River.

“Normally the pepper is grown by irrigation,” said Paul Gepts, a crop researcher at the University of California, Davis. “But the supply of water has been decreasing and if you don’t have a certain minimum amount of water to irrigate your crops, unless there is rain, there won’t be a crop.”

There are five species of the chilli pepper, spread over the Americas, from Mexico to Bolivia, that have the hotness required for the Sriracha sauce. Some of these varieties are used for other hot sauces and Sriracha dupes.

But the fans of unmistakable green-capped sauce can spot the difference and are staying loyal to the original.

“For Sriracha, its particular flavor and quality really dictates how you have to have jalapeños, because of the unique flavor profile that consumers love,” Walker said. “Those very pungent, kind of tangy, almost citrus notes of the chili.”

Grilled Asparagus. Yum.

Since I am not living in my former state that likes grilled asparagus (and a town up north near where I used to live had an asparagus festival), I am stuck with having deep-fried asparagus from a nearby pub. I actually like deep-fried even better, especially as the said pub also has the best beer selection around.

Their sauteed oysters with spinach, etc. is also especially good.

Fried asparagus sounds good but oysters to me are nothing but big ole seafood loogies and my dad LOVED them! He sucked them right out of the shells. I couldn't watch, I'd gag just seeing him eat them. :vomit:

Grilled asparagus and grilled zucchini are two of our go to's whenever utilizing the grill.

My family and I have this thing for croissant sandwiches from Costco, especially the ones with roasted beef and chicken.

They're flaky, rich, and filled with just the right amount of meat and condiments. We love them so much that we order two platters per week. They've become our go-to breakfast meal. You can see photos and prices in this article about Costco Catering.

I buy croissants at Costco, but I'm not sure that they are sold as sandwiches. I'll have to check next time.

France to spend €200m destroying wine as demand falls

The French government is allocating €200m (£171.6m) to destroy surplus wine and support producers.

It comes amid a cocktail of problems for the industry, including a falling demand for wine as more people drink craft beer.

Overproduction and the cost of living crisis are also hitting the industry.

Most of the €200m will be used to buy excess stock, with the alcohol sold for use in items such as hand sanitiser, cleaning products and perfume.

In a bid to cut back on the overproduction, money will also be available for winegrowers to change to other products, such as olives.

In funnelling the money into the industry, the French government aims to stop "prices collapsing... so that wine-makers can find sources of revenue again", Agriculture Minister Marc Fesneau said.

Australian wine glut challenges industry
Record wine production combined with a reduction in overall sales volume has seen Australian wine inventory levels hit a high not since 2005–06, according to Wine Australia’s Wine Production, Sales and Inventory Report 2021.

The wine glut means more than two billion litres of unsold Australian wine is sitting in storage, the result of a record-sized vintage crop, the sharp reduction in exports to mainland China, and global shipping difficulties that made it more difficult to get wine into markets.

Huge tariffs were imposed by China’s Ministry of Commerce on bottled Australian wine in November last year, leading to a 10 per cent fall in export value in 2020-21 and a 5 per cent decrease in volume for the year. Domestic sales were also down 8 per cent in value and 3 per cent by volume in 2020-21.
