So I thought that jurisdiction over the defendant in a criminal case was obtained by arrest, not by service of process. Is this an Arizona thing?

Yes.If a defendant wants to question the trial judge's interpretation or application of the law, wouldn't it be more appropriate to have a hearing without the jury, rather than having the witness testify in open court in front of the jury?

Yeah, initially a sanction of $10,000, after which Orly (or really her University of Chicago JD alleged inamorata) doubled down with a motion for reconsideration, to which the Judge responded by doubling the sanction amount.
